This establishment inspired me to add it to Google Maps because its café pingado was the best I’ve had in Portugal after six years here and hundreds of pingados. Yes, it looks like a run-down and very typical, Delta-branded Portuguese pastelaria and coffee shop next to the Castelo de Beja. But the barista here properly pre-heats the cups. And the attention to detail on their café pingado really makes it stand out. It is Delta coffee, which is ubiquitous in Beja. Delta is capable of being quite good despite its national size and distribution. But it also can be harsh and burnt because some cafes do not sufficiently clean/maintain their equipment nor have it properly tuned for proper extraction pressure and temperature. The spot of milk on a café pingado is also typically separated and distinct from the coffee itself: floating on top, and reheated from a pot sitting around for an hour depending on turnover. But not here. They pull their espresso at the right pressure and temperature to ensure a rich extraction with a textured crema I would typically find in some of the better cafés in Italy. The shot is somewhat strong and rounded, but without being bitter or burnt as in the cafes with less maintained machines. The milk is properly heated and combines with the espresso in a true emulsion, with no hard boundary between milk and coffee. In fact, I couldn't tell it was a pingado from looking at it. Only when tasting it could I sense the milk had completely blended with the espresso. The result is the most sublime café pingados I’ve had in the country. Do not mistake its modest appearance for the quality in the cup.
